I love to bake with protein because it works as a flour, but in my opinion, is a much healthier option, and adds that sweetness if you're using vanilla flavored protein!
I found this new protein powder at Wegman's, and I was very pleased with the way this recipe came out. The brand is one that I've been using for many years for several different products and I was excited to see that they came out with a protein powder. This protein powder is coconut-based which tastes so good, and is perfect for baking! I'm so excited about it!
I love to test out different recipes using as minimal ingredients as possible. I feel better about eating foods that are simple, basic, and as natural as can be. This recipe was sooo good and topping it with all of my favorites made it that much better!

When I go grocery shopping I always buy the LARGEST bananas that they have. My recipes that are banana based usually require an extra large banana because this is where the moisture comes from!
So here's how to make this recipe...
Ingredients:
1 extra large banana mashed
1 serving vanilla protein powder (I haven't tried this yet with coconut flour, but 3/4 c. of coconut flour would be an alternative to protein!)
dash of cinnamon
Preheat oven to 350.
In a mixing bowl. Add banana & mash banana until smooth.
Add in the protein and continue mixing. add in cinnamon. The batter should be thick-dough like. Roll the dough in your hands and then break into two pieces. Shape into two long strips. Place parchment paper over a baking sheet. I used a fork to make lines on the strips to look more like churros, and then I squeeze the churro's outer edges to make it more shapely.
4. Once you have two nice churro-like strips, place in the oven and bake for 20 minutes.
5. Top with whatever you like! The texture is similar to banana bread. I topped mine with peanut butter, and fresh raspberries & blueberries. Sprinkled with NuSyllium fiber for some brown sugar mixed with fiber!
Maple syrup would taste great, too!
