Arugula Green Apple Fall Salad

I'm obsessed with fall flavors! My birthday is in October, and I live somewhere that has so much beauty in this season. I'm so excited!




Here's another simple salad, packed with flavor, freshness, and lots of vitamins!I AM SO OBSESSED with this salad!


PS- I am still waiting for my wide mouth jars to arrive, but for now I really don't mind these larger jars! I eat out of them just fine when I need to, or pour it out into a bowl or plate when I'm home.


I love meal prepping my meals and snacks! These salads never feel like I'm eating something old, or like I'm eating leftovers. They still have plenty of crunch and freshness after a few days sitting in the fridge.


Prepping my meals keeps me fueled throughout the day. If I come home from work, or the gym without something ready to eat, I start eating anything and everything in sight and end up with the worst stomach ache. Waking up and having my oats ready to eat, my snacks on deck, and a salad like this waiting for me, makes my life SO much easier, and better! Hope it works for you, too!



I am just loving this salad, it reminded me of how much I love green apples! There are so many flavors to offer in this one. I hope you love it!


The Dressing:

3 tbsp lemon juice

1 tbsp maple syrup

1 tbsp olive oil

salt

pepper


The Salad:

1/3 cup diced red onion

1/3 cup chopped cucumbers

1/3 cup thinly sliced carrots

1 cup arugula

1/3 cup green apple chunks

1/3 cup sliced beets

1 tbsp dried cranberries

1 tbsp chopped pecans
