I have had SO many requests for this one! It's been my profile picture because it's my favorite photo I've taken of my meals EVER. I think it's so perfect looking, and the fallen blueberry on the left is so interesting, and perfectly balances the negative space. (I was an art major, LOL).
So it's no wonder you all want to see it!
Well, hooray it's finally here! This banana pancake recipe is for 1 serving of banana pancakes.
Ingredients:
1/2 c. almond flour (or coconut flour works, too!)
1/2 tbsp maple syrup (or any sweetener you like)
1 tsp baking powder
pinch of salt
1 chia or flax egg ( in a small bowl mix : 1 tbsp of chia seeds mixed with 2.5 tbsp of water, let sit in refrigerator until expanded, about 10 minutes)
1/2 c. almond milk (or coconut, etc.)
1 tbsp coconut oil
1 large ripe banana, mashed
Steps:
Combine in a large mixing bowl:
flour, baking powder, and salt.
In a separate bowl, mix flax egg, almond milk, coconut oil, sweetener (if maple syrup) and banana.
Then combine both mixtures. Batter will be a bit thick/lumpy.
Then heat an oiled frying pan over medium to high heat. Using about 1/4 cup for each pancake, scoop the batter onto the pan. Cook until golden on each side.
I love to top mine with fresh fruit, peanut butter, and maple syrup! I'll sometimes add powdered sugar, too, if I'm feeling fancy ;)
