Today I’m sharing a salad that I love! it’s filled with vibrant colors, tons of nutrients, fiber, and it’s absolutely delicious! Beets have so many health benefits, but I especially appreciate how beets enhance endurance and energy! So this salad is perfect to give you a boost throughout the day, or extra stamina for your afternoon workout!
The dressing is super delicious, and since the beets sit in the dressing, they turn it to a very beautiful pink color. Also, since the beets are very strong, they are a perfect food to store at the bottom of the jars to sit in the dressing. This will help break them down, without turning them mushy.
The chickpeas add a bit of protein, but I like to add tofu as well. Other great toppings are avocado, micro greens, and a squeeze of fresh lemon juice. I hope you love it!
