I hope your year is off to a very healthy start! This year I will be focused on my nutrition plans, and my physical health through daily exercise... both of which I am already doing, but just haven't been as structured as I like.
If you're confused about the title, chakras are the main energy centers of your body. When one of these chakras is blocked, it can throw off every single one. If you feel physical pain, or emotional turmoil, it could be your chakras being blocked. A way to clean and remove these blockages is through eating the colors of that specific chakra. Eating colorful foods is a great way to get your body back into balance (energetically). Another reason why eating a variety of fresh fruits & vegetables makes you feel so good!
Heres a list of the Chakras & the colors that they are associated with:
Muladhara, the Root Chakra: Color Red
Svadisthana, the Sacral Chakra: Color Orange
Manipura, the Solar Plexus Chakra: Color Yellow
Anahata, the Heart Chakra: Color Green
Vishuddi, the Throat Chakra: Color Blue
Ajna, the Third Eye Chakra: Color Indigo
Sahasrara, the Crown Chakra: Color Purple/Violet
So I've decided I'm starting 2022 off with tons of chakra cleansing recipes! This one hits all (except blue - which is the throat chakra).
As always, this recipe is super simple, refreshing, and flavorful! I hope you love it, and feel as good as I do after eating it!
I love to store my salads in jars. I eat them straight out of the jar as its so easy to grab & go! I keep the dressing at the bottom and then shake it up to mix the dressing just before it's time to eat! always using the freshest vegetables ensures that these will keep crisp and fresh for a few days in the fridge.
I find these jars to be the best size for all of my salads.

The dressing:
1 tbsp white balsamic vinegar (found this on Amazon, but have also seen it at Whole Foods!)
1 tbsp olive oil
1 tbsp dijon mustard
salt
pepper
garlic
fresh lemon squeeze
The salad:
2 tbsp diced purple onion
1/4 cup diced tomatoes
1/4 cup shredded carrots
1/2 cup diced bell pepper
1/2 cup chickpeas (canned/rinsed)
1/2 cup cucumbers
1/3 cup diced celery
1/2 cup arugula
pinch of fresh cilantro
other salad additions: fresh avocado, pine nuts or almonds.
