Chickpea Cobb Salad



welcome to my vegan version of a Cobb salad :) in the future I may do different versions of this, but I’m very pleased with the way this one turned out!


I just recently started preparing my salads without dressing at the bottom of my mason jars and I’m enjoying the variety in my weekly salads by switching up the dressing each day.


Typically I love to make my own homemade dressing, but I’ve been obsessed with Trader Joe’s vegan Dill dressing and had to try it with this salad. It reminds me of a ranch, but significantly lighter and more refreshing. It really brought the whole salad together.


A lemon tahini dressing would be great as well for something light and simple.


To make this higher protein, a great additional topping would be shelled hemp seeds. They have a very earthy taste, and the texture is a soft crunch, one of my favorite salad toppings!

Some varieties that would work are tempeh bacon in addition to, or instead of, the BBQ chickpeas, vegan blue cheese crumbles on top, or crispy plant-based chickn mixed in!

I try to keep my salads as simple, and colorful as possible so I‘m once again very pleased with this one, and hope you love it, too!
