Chocolate Chip Cookies with Mint CBD Oil


I never had a sweet tooth until the past couple of years, and now I need something sweet pretty much hourly. In order to satisfy my constant sweet tooth cravings, I have created a menu of healthy desserts that not only make me feel good, but also give me loads of energy, or protein for workout recovery :)


For example, my day always starts with some type of delicious overnight oats, like the very popular: Strawberry Cheesecake Overnight Oats. After that, and in between meals, I am always snacking on my Chocolate PB Frozen Protein Cookies.


When I make these yummy desserts, I always want them to taste delicious, but at the same time I want them to make me feel good, so I do that by using the most simple and natural ingredients, often with 0 added sugars.


With all that being said, I am excited to share with you my favorite addition to my dessert menu; Mint Chocolate Chip CBD Cookies!


CBD is becoming more and more prevalent in the health industry and I am so excited about it! I have terrible experiences using THC products, so CBD was my saving grace! I like to live life naturally, without using things that alter my state of mind, like smoking/drinking etc., but I find CBD to be medicinal for me.


It doesn't give that high feeling at all, it just calms my mind, and relaxes me! I love to add it to my tea before bed especially when I'm doing something calming like reading a good book, or putting on a face mask!


Recently, I decided to add CBD to my recipes when I bake. I have a Mint flavored tincture that was a perfect addition to these Chocolate Chip cookies. If you don't have any mint CBD oil, or have no interest in trying it, this recipe will be just as delicious without it!

Let's get right into the recipe and steps:


What You'll Need:


Dry Ingredients:

  • 1 cup gluten free rolled oats

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ¼ teaspoon salt


Wet Ingredients:

  • 1.5 tablespoons coconut oil

  • 3-4 dates

  • ¼ cup pure maple syrup

  • 1 flax egg (1 tablespoon ground flax seeds (or chia seeds) + 3 tablespoons water, mix together and set for 15 minutes)

Add In Ingredients:

  • 1 cup vegan chocolate chips ( I use Trader Joe's Unsweetened Cocoa Chips!)

  • 1 droplet of CBD mint tincture (Optional!)


Steps:

  1. Preheat oven to 375 F.

  2. Mix Flax egg by combining 1 tbsp ground flax with 3 tbsp water and let sit.

  3. In a food processor, add 1 cup rolled oats and blend into a flour.

  4. In a large mixing bowl, combine oat flour, baking soda, baking powder and salt.

  5. Mix together wet ingredients in food processor or blender.

  6. Mix wet ingredients with dry ingredients and then add the Chocolate Chips and CBD oil. I used my hands to completely combine into the cookie dough. (If your dough is too dry, you can add more maple syrup or coconut oil!)

  7. Line baking sheet with parchment paper, and roll dough into small balls.

TIP : You could even stop here and just add the cookie dough into the refrigerator and have no bake cookie dough bites!


8. Press on the dough balls to make them into cookie shapes since this will not happen in the oven!

9. Bake for 10-12 minutes.


This recipe should make about 8 cookies. Total calories for all of them is about a total of 688... so 86 calories per cookie!


I ALMOST ate all of them, but thankfully I wasn't the only one drooling over them & was able to share!
