I love love love protein powder. I pretty much only bake or make sweets with protein usually instead of flour and without sugar. It makes everything so much healthier in my opinion!
Anyway, I started mixing a mashed banana with my chocolate protein and it tasted like brownie batter. I used to eat it after the gym to get my protein in. I would literally always lick the bowl clean and looked forward to it everyday. I never got bored of it, but I wanted to eat it differently.
And then voila! I decided to freeze the batter which is how I created my favorite snack.
These are meant to be eaten frozen, and should be easy to chew/bite. I've tried this recipe with all sorts of different protein powders and the Juice Plus Vegan Dutch Chocolate has been the best by very far. This protein powder is what I use for most of my desserts. I love to bake with it! It can be purchased online.
I will also say that while I am a fan of the brand Vega for their powders, this brand does NOT mix well with this recipe and makes the cookies as hard as a rock!
Some trial and error with protein might be necessary if you don't have Juice Plus, or something similar.
For non-vegan eaters-- whey chocolate does mix well!
Anyway, these are very simple, very delicious, and great for a high protein snack.
In a mixing bowl:
mash 1 LARGE banana
1 scoop chocolate protein
1 tbsp peanut butter
1 tsp NuSyllium Fiber Powder (Optional)
Mix until completely smooth. Place Parchment paper on a small baking sheet and pour batter into small "cookies". Place the sheet in the freezer and wait at least two hours until eating!
I make mine at night and then enjoy them throughout the morning and day, and sometimes save one for a little chocolate snack after dinner!
