This salad is super simple, high in protein, filled with tons of vitamins, nutrients, and flavor! Don’t skip out on the toppings, as the (shelled) hemp seeds, pumpkin seeds, and nutritional yeast provide a lot of protein! (over 20g!)
Having hemp seeds, pumpkin seeds, & Nutritional Yeast in your kitchen pantry is highly recommended, and should be a part of your diet if you are eating fully plant-based!
Nutritional yeast is typically fortified with vitamin B 12, and has tons of protein. It has a cheesy flavor, and goes great on pastas, salads & in dressings/sauces!
The salad is perfect for meal prep, and will last up to five days in the refrigerator.
Go less on the dill if you're not a big dill person!
