I've done a few carrot cake recipes in the past, but this is my first time doing an overnight oats carrot cake recipe, and I'm OBSESSED! Carrot cake is my all time favorite dessert, and these oats completely satisfy that craving for me :)!
As always, the key to the best tasting meal prep is using the freshest, purest ingredients.
For the cream cheese, I always enjoy Trader Joe's Vegan Cream Cheese.
I also use pure maple syrup, fresh grated ginger and fresh sliced carrots.
I always buy unsweetened, almond milk and for this recipe, you'll want to use a vanilla flavored unsweetened plant milk to give it the vanilla flavoring. If not, sub vanilla extract!
Typically I add protein to my oats to make them more cake-like (and of course for extra protein), but I loved the way it tasted without it! If adding protein to your oats, just use extra almond milk!
