Eggplant Pesto Pizza Bites w/ Balsamic Glaze

If you've been following along with my posts since the start, you'll know by now that I do eat CARBS, but I don't frequently eat bread. I have nothing against bread, and I LOVE how soft and warm it is. However, I have found that when I don't eat bread, and replace it with root vegetables, and fruits (carbs!), I feel so much more energized, and better all around.



I love cauliflower crust pizzas, but today I went with this super tasty eggplant bite pizza. It was to die for! I topped it with a vegan pesto which I got at Trader Joe's (yum, highly recommend!), fresh vine tomato slices, arugula, and a balsamic glaze drizzle. SO GOOD.


I typically love to make my own pesto, but I found this one, and it's absolutely amazing! I will eventually try to recreate it on my own and share it here.


You could make this with cauliflower crust, or regular crust, however you like! But this is a simple and lighter option, that has so much flavor! Hope you love it!


Ingredients:

1 large eggplant

olive oil

salt

pepper

Vegan Pesto

2 large vine tomatoes (thinly sliced)

about 2-3 cups arugula

balsamic glaze (definitely not necessary, but so yummy!)




Instructions:


  1. Slice eggplant into 1/2 inch thick circle bites.

  2. Lay eggplant slices on paper towel, sprinkle with salt, and pat dry. Place new paper towel on and let them sit for about 30 minutes to absorb the extra moisture.

  3. Preheat oven to 400.

  4. Spread eggplant slices on baking sheet evenly, drizzle with olive oil, salt and pepper. Bake for 30 minutes.

  5. Top with vegan pesto, fresh tomato slice. And stick back in oven for about 10 minutes.

  6. Finally, top with fresh arugula, and drizzle with balsamic glaze!
