I don’t know which part I love more, the salad, or the salad dressing… All I know is this is not your average garden salad or balsamic vinaigrette. And I’m realizing I say this for everything I make, but this is my current obsession. I chose not to meal prep this salad just because the dressing is a bit thicker than my normal dressings. This would go great in a meal prep jar, just put the dressing on the side rather than at the bottom.
this meal is super balanced, it has quinoa for fiber and energy, avocado and hemp seeds for healthy fats, bell pepper, tomato, onion, and pomegranate seeds for vitamins and nutrients, and tofu/hemp seeds for protein.
The dressing is super tangy, And would probably taste great even without the Dijon mustard if you don’t like mustard.
