I love cheesecake so much and I'm so happy to have vegan alternatives so that I can make it. This actually tasted a lot like an actual pumpkin cheesecake!
I find that a lot of these recipes taste better after sitting / soaking in the fridge for a few days. My oats, salads, and these parfaits especially! I swear they taste better the longer they sit (usually by the third or fourth day!)
Anyway, this could be a perfect snack, breakfast, or dessert! Totally up to you.
The small jars I used make this a very small dessert, so feel free to double up on your ingredients, or do 1-2 servings instead of 3.
I will list the calories per serving below if you happen to divvy yours up for different serving sizes.
When it comes to plant based cream cheese, and yogurt, which are both in this recipe, I like to look for products with MINIMAL ingredients, and typically with 0 added sugar. Those are two important things I always look out for when buying these products, or anything!
I love Trader Joe's vegan cream cheese! It's perfect, and tastes even better than regular cream cheese. At Whole Foods, I found a delicious vegan yogurt with zero added sugar. It's called Lavva, and it's made from pili nuts, it's just delicious!
Let's get to this recipe!
Ingredients:
1/2 cup Vegan Vanilla Yogurt
1/2 cup Vegan Cream Cheese
1 serving Vanilla Vegan Protein (I used TB 12 for this and it was fantastic!)
1 cup Pumpkin Puree
1 or 2 tbsp Maple Syrup (depends how sweet you like!)
Cinnamon
Nutmeg
Toppings per jar:
1 tbsp Almond Butter
1 tbsp Walnuts
1 tbsp Dried Cranberries
In a small bowl, combine yogurt, cream cheese, and protein, and set aside.
In a separate small bowl, combine pumpkin, maple syrup, cinnamon, nutmeg.
In each jar, create layers from each mixture. I started with the cream cheese and yogurt mixture, and then switched to pumpkin, and layered until I used up both mixtures.
Once you have used up all of your mixtures, top each jar with almond butter, walnuts, & dried cranberries. This part is not necessary but highly recommended!
Again I made 3 jars, but since it was only 260 calories, it wasn't the most filling so this could be a snack, or a dessert, or if you use a larger jar, you could make this for 2 or just 1 serving.
