Peanut Butter Cup Overnight Oats

Ingredients:

  • rolled oats

  • dark chocolate chips

  • vanilla protein powder

  • plant milk

  • chia seeds

  • peanut butter (natural is best for a creamy layer that is easy to spread).


The layers will make for extra steps, and aren't necessary! Recipe is for 1 full 16 oz. mason jar (which is about 2 servings of oats)


Step 1: In a large bowl, combine 1 1/2 cup rolled oats, 1 cup plant milk, 2 tbsp chia seeds, 1 scoop vanilla protein powder. Mix until well combined. (Thickness will vary due to varying proteins, so add more milk to achieve your desired creaminess)


Step 2: Fill bottom layer of jar with oat mixture by adding 1/4 cup of the mixture to the bottom.


Step 3: Melt dark chocolate chips. I typically add 1 tbsp coconut oil to a bowl with dark chocolate chips and microwave ~ 30 seconds. (If doing layers, you may need to remelt the chocolate)


Step 4: Add layer of 1 tbsp peanut butter on top of oat mixture. Then add layer of 1 tbsp melted dark chocolate.


Step 5: Repeat steps until filled to the top with the top layer being chocolate. Make sure this final layer is thin so that its easy to crack open after it hardens.


Step 6: Place in freezer for at least 10-20 minutes so that the chocolate can harden on top, then store in refrigerator.
