Pecan Pie-Blueberry Cheesecake Overnight Oats

Overnight oats have been my favorite thing to make since I first tried them a few years ago, so plenty more of these will be coming out!


This one was just so good, I had to share!


Similar to my Strawberry Cheesecake Overnight Oats, these are a simple combination of oats, almond milk, vegan cream cheese, maple syrup, fruit, and nuts.


When I make these I always use the simplest ingredients! Especially when it comes to buying things like maple syrup. A super important tip for this is to buy maple syrup that is pure, without any added sugars especially ones without High Fructose Corn Syrup (HFCS)! It's easy for this healthy intended breakfast to turn into something super unhealthy by adding in a maple syrup filled with HFCS, so be careful when grocery shopping!


For the cream cheese and almond milk, I buy both from Trader Joe's. The cream cheese is not sweet, and does not contain added sugars. I make sure to buy the Almond Milk Unsweetened to avoid added sugar there as well.


So let's get into the steps, and ingredients!


What you'll need:

Rolled Oats

Almond Milk

Vegan Cream Cheese (Trader Joe's is the best IMO)

Cinnamon

Maple Syrup

Blueberries

Pecans

Optional - Vanilla Protein Powder


In Each Jar:

1/2 cup rolled oats

1/2 cup almond milk (or 3/4 cup if you don't like it too thick!)

1.5 tbsp vegan cream cheese

1 tbsp maple syrup

dash of cinnamon


MIX WELL


Top With:

1/3 cup fresh blueberries

1 tbsp pecans


Add cover and let sit overnight. You can prep and let them sit in the fridge for up to 5 days!


These are intended to be eaten cold, like a cheesecake would be!


When it's time to eat, just open the jar, mix well, and then add protein if you like, and enjoy!
