Three DELICIOUS Plantsgiving Hacks!

Plantsgiving: A Fully Vegan Feast to Remember 🍂🌱

Two years ago, I hosted my very first fully vegan Thanksgiving, and let me tell you—my family was blown away! What started as an experiment in plant-based holiday cooking (for my full Italian family's first ever turkey-less/animal-less Thanksgiving), turned out to be a huge hit, but also hours and hours of cooking!

This year, I’m ready to take Plantsgiving to the next level with a menu that’s nutritious & hearty, flavorful, and just as satisfying as the traditional spread—without any of the animal products, and that's SUPER EASY!

Here’s a peek at what’s coming to the table this year, and how easy it is to serve:

  •  Hack #1 Falafel Stuffing

Who says stuffing needs bread to be delicious? I found the most delicious Falafel Stuffing Bites EVER from Fabalish. These are limited edition for the holidays only, so don't miss out!! PS. I have added my code to save or you can use MYPLANTBASEDKITCHEN at checkout!

These savory bites are loaded with herbs, warm spices, and a hint of cranberry for a stuffing that’s crispy on the outside and tender on the inside.

Literally just pop these bites in the airfryer at 325 for 10-15 minutes, and then you will have the tastiest falafel stuffing bites, made with only the simplest, and all organic ingredients!

They're also GF, dairy free, soy free, nut free, GMO free, etc. etc. the list goes on, they're just amazing!

  • Hack #2 Homemade Mushroom Spice Umami Gravy

Gravy is non-negotiable on Thanksgiving, and this year, I’m doubling down on flavor. Made with a rich mushroom base, garlic, onion powder, and a blend of umami-packed spices, this gravy is velvety, aromatic, and the perfect partner for…well, everything.

I used this spice blend from Collected Foods to make a rich and simple plant-based mushroom gravy. I added it to a boiling pot of water with soy sauce, dijon mustard, thyme, rosemary, nutritional yeast, garlic, onion powder, some old bay for celery salt, and then immersion blended in gluten free flour until it was to the desired thickness.

It was the longest one to make out of these hacks

I don't have any measurements or an exact recipe, but the ones I looked to as a reference are here..

And I put my own spin on it! Hope you are inspired to try your own homemade gravy this year!

  •  Hack #3 Mashed Potatoes with Sour Cream & Onion Dip

(saving the best for last!)

Mashed potatoes are always a crowd-pleaser, but this year, they’re getting a fun twist. I’m mixing in a creamy, tangy sour cream and onion dip for a nostalgic, comforting upgrade. Think classic potato chip flavors meet silky mashed potatoes—it’s indulgent, unexpected, and absolutely delicious. And the best part? That's all you need-- the dip, and the potatoes!! They come out perfectly creamy and soft, they practically melt in your mouth. PS. Look who's on the jar!

STEPS: Simply peel, and boil your potatoes until perfectly soft. Strain out the water, pour a generous amount of Fabalish x Mario Fabbri Sour Cream and Onion Dip & VOILA the best mashed potatoes EVER!

Did I mention its organic, and preservative free? A magical dip made by some magical people! I hope you love it!

Once completely doused in SCO, take your masher and whip and mash the two together until its perfectly blended.

I really love topping with more sour cream and onion dip, some black pepper, and some chives.

--chefs KISS!

🧡 Why I Love Plantsgiving

For me, this holiday is all about celebrating abundance and gratitude. Creating a plant-based spread that’s packed with flavor and heart not only brings joy to my family but also aligns with my commitment to cooking sustainably and mindfully.

And what I'm really excited about is making it easier and tastier than ever to go plant-based for Thanksgiving. But at the end of the day, no matter what's on your plate this year, I'm so grateful for you!

What’s on your Thanksgiving menu this year? Are you trying something new or sticking with the classics? Drop your ideas below—I’d love to hear them!

Wishing you all a warm and joyful Plantsgiving! 🌱🦃
