Today I am so excited to share this with dish with you!! It is my latest obsession and is filled with so many delicious flavors, and as always, is super simple! It is inspired by my favorite cafe in Hawaii called the Peace Cafe. The dish that I am recreating is called the Peace Plate! If you ever find yourself in Honolulu, this is a must try, although I think my recreation here is as close as you can get to tasting it yourself!
It is a salad plate with dressing and veggies, along with hummus, rice, and I added tofu for extra protein! Mostly all of the ingredients are essential, although I will say the tofu is not necessary.
Let's get right into the recipe!
For the dressing:
In a small bowl combine:
2 tbsp tahini
1 tbsp olive oil
1/2 tbsp minced garlic
2 tbsp fresh lemon juice
2 tbsp Apple Cider Vinegar
whisk until smooth and creamy!
Now to assemble the plate add:
1/2 cup black & white rice
2 cups mixed greens
1/2 cup sliced cucumber
1/3 cup thinly sliced carrots
1/3 cup sliced cabbage
1/2 cup sliced tomatoes
1/4 avocado sliced
3/4 cup sautéed bean sprouts (or fresh!)
1 cup crispy tofu
1 tbsp hummus
fresh cilantro (this is a must!)
then top the entire plate off with the salad dressing and enjoy!
