I have to start by saying, when I created my Tik Tok page, I chose the name MyPlantBasedKitchen not knowing entirely that Plant Based was not synonymous with Vegan. This upset some people because my meals don't completely follow the "rules" of Plant Based. But I am going to keep it because I think having RULES to the way you eat is complete BS.
I don't eat meat, or dairy, or any animal byproducts, and not because of some rule, but because I've come to realize it's just what makes me feel good.
I eat to enjoy my food, and to use it as fuel. I try to make each meal as nutrient dense as possible while making it taste AMAZING. That's what this meal is all about. Lots of nutrients, flavor and great taste. I hope you love it as much as I do.
Someone commented that bread and pasta won't make you fat, and that pasta is still vegan. And yes I am aware of both of these, but as I just mentioned, I like to make my meals taste fresh, be full of flavor, leave me energized, and feeling good. That is not to say that I never eat pasta, or that this meal wouldn't taste great with regular pasta! Enjoy it however makes you feel good!
For the 'meat' I use impossible beef. you can find this at any major grocery store like Whole Foods, Stop & Shop, or Target!
Ingredients:
impossible beef
oregano
garlic
Italian seasoning
cherry tomatoes
olive oil
fresh basil
spiralized zucchini noodles
salt
pepper
Meatballs:
Preheat oven to 350
Mix:
impossible beef
oregano
salt
pepper
garlic
roll into small balls
and bake for 15 minutes
Tomato sauce:
In a skillet, on medium heat, add olive oil and cherry tomatoes. Season with salt, pepper, and fresh minced garlic. Cook until cherry tomatoes burst, stirring occasionally. Squish tomatoes to complete the sauce, and let simmer. Top with fresh basil.
Noodles:
Most grocery stores sell precut zucchini noodles, or you can buy a spiralizer to make your own!
Zucchini noodles can be eaten raw or sautéed. Completely preference. I like mine raw for extra crunch and freshness.
Pour tomato sauce over your zucchini noodles, add your "meatballs" and finish it off with some vegan "parmesan cheese"!
