Strawberry Cheesecake Overnight Oats with Toasted Coconut and Toasted Almonds

I can't find the comment on Tik Tok, but someone suggested I recreate the Starbucks Strawberry Overnight Oats. I decided to put a little spin on it, and add cream cheese to make it a yummy cheesecake oatmeal.


They came out SOOO good! I used the Vegan Cream Cheese from Trader Joe's and highly recommend using that for this recipe.


For the toasted coconut, and toasted almonds, I just added slivered almonds, and shredded coconut flakes to a baking sheet and baked at 400 for 4-7 minutes. Cooking times will vary, but keep your eye on the coconut flakes so they don't burn!


Here's what you need for the whole recipe :)


In Each Jar:

1/2 cup old fashioned rolled oats

3/4 cup vanilla almond milk (I use unsweetened)

1.5 tbsp Vegan Cream Cheese

1 tbsp maple syrup

1/2 cup sliced fresh strawberries

1 tbsp toasted almond

1 tbsp toasted coconut



Steps:

1. In each jar, add the oats, almond milk, cream cheese, maple syrup, and then stir everything completely.

2. Once mixed, top with fresh strawberries, almond, and coconut. Add the lids, and refrigerate.


These are good in the refrigerator for up to 5 days! I like to mix vanilla protein in my oats, although it is not necessary. The protein adds extra sweetness, and thickens up the oats and makes it taste like actual cake/dessert!
