This salad is 10000% inspired by the Kale Caesar from Sweetgreen; a salad that I can no longer order due to the non-vegan dressing, and the non vegan parm crisps. So I'm so excited to share my latest creation! And I love that I can make this myself, on top of having it taste just as good (if not better) than the OG Sweetgreen version.
The Vegan Caesar dressing:
1 tbsp Hummus (I like the garlic hummus from Trader Joe's)
1 tbsp olive oil
1-2 tsp Dijon mustard
1 tbsp lemon juice
1 tbsp caper juice
1 tsp pepper
The salad:
2 cups kale (baby or regular)
1/4 cup halved grape tomatoes
1-2 cups romaine lettuce
1/4 cup tofu
1/8 cup vegan bacon pieces
Extra toppings:
Plant Based Parm Crisps
Avocado
Lime squeeze
Tips for stacking your jars:
Stacking kale over dressing is safe, and even helps the kale break down easier! It is very strong and can sit in the dressing which should always go at the bottom of the jars.
Do NOT add hot food to the jars. Allow bacon/tofu to be completely cooled before adding.
The romaine should go above the tomatoes.
Avocado can be added to the jars if they are doused in fresh lemon juice, but it is best to add the day of eating. Same goes for the parm crisps, they can be added to the jar if they sit at the very top, but would be best if added day of eating.
