Veggie & Falafel Salad with Creamy Lemon Tahini Dressing


Lately I've been craving all things Mediterranean! I was experimenting with my chickpeas and made my own falafel! Well, I tried. It wasn't perfect, and it took a lot of work, so once I do perfect it, I will have a falafel recipe here for you!


(I'm also open to and dying for tips, and tricks, if there are any falafel pros reading!)


If falafel isn't your thing, you could add crunchy chickpeas! Or, if you don't like chickpeas, you could add tofu, toasted pine nuts, beans, lentils or whatever else you like for protein!





Check out the beautiful colors of this salad! That is art!

But, I have to say, the dressing for this is definitely my favorite part! It was perfectly creamy and so full of flavor!



Let's get right into the steps and ingredients !



What You'll Need:

Olive Oil

Tahini

Lemons

Maple Syrup

Cold Water

Salt

Pepper

Red Onion

Red Bell Pepper

Sliced Carrots

Cucumber

Grape Tomatoes

Mixed Greens

Fresh Herbs like Parsley or Cilantro(Optional!)

Falafel, or any protein source


In Each Jar:

1/2 tbsp Olive Oil

1/2 tbsp Tahini

1/2 tbsp Lemon Juice

1 tsp Maple Syrup

1 tbsp cold Water

Salt & Pepper to Taste

STIR

1/4 cup diced Red Onion

1/2 cup sliced Grape Tomatoes

1/3 cup sliced Carrots

1/3 cup diced Cucumbers

1/2 cup sliced Red Bell Pepper

1 cup Mixed Greens

Fresh Herbs

1/2 cup Falafel, or Protein Source
