This dish was inspired by a recipe request! A pasta salad, although I decided to use zucchini noodles instead of pasta! Try it however you like it! :)
**A lot of my meals are considered "low carb" because I swap out breads, and pastas for veggies, but I am not a keto person, and my diet is not low carb! I like to remind you of this from time to time because I get a lot of comments to not "fear carbs"! I eat oats, potatoes, and tons of other starchy carbs, and wouldn't ever want to promote an unhealthy relationship with carbs, I just prefer to eat like this!**
That being said, if you choose to create this recipe with zucchini noodles, it is much lighter than it would be with regular pasta thus making this a side dish, or light lunch!
If you're not using zucchini noodles, I would suggest a cup of bowtie pasta if you'd like to use pasta here!
Either way, this was absolutely delicious, and I hope you love it!
In each jar, add:
1 tbsp olive oil
2 tbsp fresh lemon juice
1 garlic clove pressed
salt
pepper
1 tbsp nutritional yeast
*STIR WELL*
Then add:
1/4 cup diced red onion
1/2 cup chopped cherry tomatoes
1 cup zucchini noodles, or bowtie pasta
1 cup finely chopped spinach
1 tbsp fresh basil leaves
1 tbsp pine nuts
(Another great addition to this would be 1/2 cup of chickpeas for extra protein!)
Shake it up once you're ready to eat, and enjoy!
