Yummy Fig & Caramelized Onion Chickpea Pizza



I'm so excited to be back, and sharing my tasty meals with you all! & Thank you for your patience as I've been traveling and settling back into my routine after the most amazing trip to Hawaii. I stayed longer than I planned because I just loved it so much! Although, I missed my kitchen and making content for all of you! So excited for all of the recipes I'm sharing this week!


Today I wanted to share this super delicious and healthy pizza. The world seems to get scarier and scarier, and with the chaos of the election, I figured this pizza would be the perfect comfort food. Please remember to take care of yourself a little extra this week. Not only is it important to vote, but to also do something good for YOU, because things haven't been easy on anyone this year.


Now, let's get into the pizza details!


First off, I'm using a frozen pizza crust. The brand is Banza and the crust is made from chickpeas! It was WAY better than I expected! I even preferred it over the cauliflower pizza crust that I usually use. The crusts are vegan, high protein, gluten free, and made with super simple ingredients!

To start, I baked the crust at 400 for about 5 minutes, and then added my toppings.





For the sauce, I made a DELICIOUS vegan cashew cream sauce that was super simple, and SO good!


You'll want to save this recipe as you can use it for pastas, and other dishes!


Cashew Cream Sauce

1/2 cup roasted cashews

1/2 cup unsweetened plain almond milk

1-2 garlic cloves

2 tbsp nutritional yeast

1 tbsp fresh lemon juice

Basil

Salt

Pepper


Blend all ingredients until smooth in food processor.


This cream sauce was enough to cover the entire pizza crust.


I then topped the pizza with:

Fresh figs

Mushrooms

Caramelized Onions


Then I put that back in the 400 degree oven for another 5-6 minutes. Finally, to give everything a perfect crisp, I turned the broiler on. I made sure to watch that closely. Broiling times will vary depending how crispy you like it, but mine was perfect after about 3 minutes. Keep your eye on it though!


Once that was finished, I finally topped the pizza with crushed red pepper, fresh arugula, and date glaze sauce! If you don't have, or like, the date sauce, you could use a Balsamic Glaze if you have that!
