Yummy Jar Taco Salad

The best part, in my opinion, of eating plant based is how beautiful, and colorful the food always looks! This jar taco salad is packed with nutrients, flavor, and lots of amazing colors! I hope you love it! The jar salads are super convenient (and fun) because layering the foods prevents the lettuce for example from getting soggy. It allows you to have a complete meal ready to eat either from the jar or if you like to pour it into a bowl. I've enjoyed storing the salads in the glass jars because rarely do I see any browning in fruits or vegetables.


However, you certainly don't need to use jars to enjoy this recipe either!


What I love about this salad is how simple, yet flavorful it is. This one is great if you're on a low budget for groceries. I bought 1 can of corn, 1 can of beans, 1 large tomato, 1 red onion, 1 avocado, 2 limes, iceberg lettuce, and my island salsa for about $13 at my Trader Joe's.


This salad comes to about 450 calories, and I do recommend adding ground "meatless meat" when it comes time to eat your salad!






The Sweet Cilantro Lime dressing:

1 tbsp olive oil

1 tbsp maple syrup

1 tbsp fresh squeezed lime juice

fresh pressed garlic

salt

pepper

1 tbsp fresh finely chopped cilantro








Salad Ingredients:

1/2 cup diced red onion

1/2 cup diced tomato

1 tbsp salsa (I used Trader Joe's Island Salsa! My fav)

1/2 cup corn

1/2 cup black beans

1/2 cup sliced bell pepper

1-2 cups lettuce (I used iceberg because I was about to throw it away, but I like mixed greens typically for more nutrients!)

1/2 cup avocado


I added fresh lime juice to the top of the avocado to ensure it stays fresh and green for the next few days in the fridge. with just a pinch of salt and pepper for added flavor!


When it comes time to eat, you simply shake the salad in the jar and pour into a bowl, and enjoy!


Again, I would suggest adding some ground "meatless meat" as well for extra protein!
